Cocunut and Jaggery sweet.. Authentic Goan Dodol.. made by me.. turned out nice.. love it.
Pair this delicious dish with a risotto and a nice bottle of wine. This Italian favorite is easy to make and sure to impress your guests.
- 4 Cups of coconut milk; 2 thick, 2 thin.
- 250g Palm Jaggery
- 1 Cup Rice Flour
- 3 Pinches of Salt
- Cashew Nuts
- 1/2 Teaspoon Cardamom Powder
Take a bowl and add crushed jaggery. Add 2 cups of thin coconut milk, stir and add rice flour and stir. Make sure that there isn’t any lumps. If there are lumps then use strainer and strain it.
Put the mixture in a vessel and keep it on low flame. Add 3 pinches of salt. Stir continuously. Add 2 cups of thick coconut milk. Keep on stirring. Once the mixture thickens, add cardoman powder and Cashew nuts. Let it cool, pour in a bowl and refrigerate it for some time. Then serve.
